French Christmas Dinner Ideas?

NEED HELP FROM CULINARY EXPERTS?

I go to a culinary school and have a practical exam. I need to make a dish with a protein starch and veg. I am given the protein on the day of and do not know what it is until then. The starch and veg however, i can plan ahead. Its a classical french class so classical french dishes are appreciated. I only have 1 hour and 15 minutes so if you have any ideas about what i can do, i’m looking to impress so mashed potatoes are out. I was thinking a spinach veg, but how would you do it? I don’t plan to work as a chef, but I would love to cook like one. Is it necessary to go to culinary school?
