NEED HELP FROM CULINARY EXPERTS?

I go to a culinary school and have a practical exam. I need to make a dish with a protein starch and veg. I am given the protein on the day of and do not know what it is until then. The starch and veg however, i can plan ahead. Its a classical french class so classical french dishes are appreciated. I only have 1 hour and 15 minutes so if you have any ideas about what i can do, i’m looking to impress so mashed potatoes are out. I was thinking a spinach veg, but how would you do it? Any help is greatly appreciated!

    I would do scalloped potatoes with Gruyere Cheese and a hint of nutmeg or Cayenne pepper. You could also layer sweet potatoes as your putting it together to give some added color.

    For the spinach, you could cook it then add a little cream, or no cream and some toasted pine nuts, or a little lime or lemon juice, or some bacon bits. Since I’m not a fan of cooked spinach, I think I would like to find a way to add some crunch, and citrus to it. I think the pine nuts would be a good choice, but pecans might do it also.

    Sorry I answered your other question ya is being bad, so I didnt see this link. The recipe has nothing to do with this, but its good anyhow! You need to use your creativity on this, you need to earn theres grades, how much simpler of an exam could you have hun? Maybe this isnt your future if you cant think of this on your own.

    How about a roasted vegetable dish including Green Beans, Fennel and shallot?

    If it wasn’t starchy enough - you could toss in some red potatoes.

    Here is one version of this popular side:

    Although that one says to cut the fennel into 1/2″ moons - I prefer to leave mine in quarters. Also - that recipe doesn’t have additional spice, I myself would add some white pepper and sea salt and a good dose of freshly ground black pepper at the end of cooking. You could herb it up to go with your main.
